My daughter loves these, she calls them "Surprise Meatballs" and I make them for pasta, or an alternative to hamburgers, with sauce or without, or even on sandwiches the next day.
I usually don't measure things, so these are approximate, just take the idea and run with it!
1 package of ground beef
1 egg
1/2 cup bread or cracker crumbs
salt and pepper
any other seasoning you want (garlic, parsley, steak spice ect)
cheese, cut into small cubes
Mix up everything except the cheese, and start forming meatballs, whatever size you like, and stick a cube of cheese inside it, make sure that the cheese is totally covered by the meat.
I like to boil the meatballs, I find that they don't get that crunchy outside that way, and there's less fat that way too, and it works just fine! So....boil them until they're done and then do what you want with them, throw them in the pasta sauce or whatever, when you bite into them you get a surprise, ooey gooey melty cheese! So yum!
(I've tried it with cheddar, feta and mozzarella, and it worked, so experiment!)
